Saftiger Heidelbeerkuchen
Dieser Kuchen mit jeder Menge Heidelbeeren ist quasi eine Geheimwaffe. Passt immer, wird immer geliebt, Nicht-Veganer werden den Unterschied nicht merken 😉
Zutaten
– 400 g Heidelbeeren
– 250 g Weizenmehl (Typ 405)
– 130 ml Pflanzenmilch ungesüßt (Hafer, Reis oder Sojamilch)
– 160 g vegane Butter (weich)
– 2 TL Backpulver
– 135 g Zucker
– 1/2 TL Vanille
– 1 EL Apfelessig
– 1 Prise Salz
– optional: Puderzucker zum Bestäuben
Zubereitung
- Ofen vorheizen: 180 Grad (165 Grad Umluft).
- In einer großen Schüssel weiche Butter, Zucker und Salz mit einem Handrührgerät cremig rühren.
- Mehl mit Backpulver vermengen. Die Hälfte der Mehlmischung unter die Butter-Zuckermasse rühren.
- Pflanzenmilch mit Essig mischen, zur Masse geben, und mit dem restlichen Mehl nun nur solange verrühren, bis alle Zutaten vermischt sind.
- Den Teig in eine gut gefetteten Springform (24 – 26 cm) geben, glatt streichen und mit den Heidelbeeren belegen, bzw. die Beeren teils in den Teig drücken, den Rest leicht andrücken.</li><li>Im vorgeheizten Ofen 45 Minuten backen.

Blumenkohl-Erbsen Bolognese
Heute gibt’s Blumenkohl-Hack für „Eilige“, denn das ist auch nach Feierabend schnell und mit wenigen Zutaten zubereitet. Gelingt leicht, und vielleicht bleibt für den nächsten Tag noch etwas übrig.
Zutaten
Für 4 Personen:
– 500 g Spaghetti (ohne Ei / vegan)
– 150 g TK Erbsen
– 400 g Blumenkohl
– ca. 700 g passierte Tomaten Passata
– 1 große Zwiebel
– 2 EL Tomatenmark
– 1 EL Balsamico-Essig
– italienische Kräuter (Basilikum, Oregano … nach Wahl)
– Salz, Pfeffer und etwas Zucker zum Abschmecken
– Olivenöl zum braten
– optional: frischen Basilikum und Cocktailtomaten als Topping
Zubereitung
- Zwiebel fein hacken, in Öl anbraten.
- Blumenkohl waschen und mit einer Reibe grob raspeln.
- Blumenkohl zu den Zwiebeln in die Pfanne geben und 10 Minuten mit anbraten.
- Essig, die passierten Tomaten, Tomatenmark und die Erbsen dazugeben.
- Mit Salz, Pfeffer, Zucker und Kräutern abschmecken und mit geschlossenem Deckel ca. 15 min. köcheln lassen.
- In der Zwischenzeit die Nudeln nach Packungsanweisung kochen. Nudeln mit der Bolognese servieren. Bon Appétit!

Einfache Cashew-Tomaten Pasta
Nicht immer haben wir Zeit, aufwendig zu kochen. Manchmal möchte man einfach kein Gemüse schnibbeln, oder es muss einfach schnell gehen…
Diese vegane und cremige Pasta Sauce besteht aus nur wenigen Zutaten, die alle zusammen in nur einem Gefäß kurz gemixt und dann unter die frisch gekochten, heißen Nudeln gemischt werden.
Klingt einfach? Das ist es auch 🙂
Einfache Cashew-Tomaten Pasta, vegan
Dieses Rezept ist eine einfache aber leckere Kombination aus Cashews, passierten Tomaten und ein paar Gewürzen.
(Für 4 Portionen)
Wer einen leistungsstarken Mixer hat (meiner ist von Bianco) muss die Cashews auch nicht zuvor in Wasser einlegen. Bei Verwendung eines Stabmixers die Kerne besser mind. 4 Stunden zuvor in Wasser einlegen.
– 500 g Pasta (nach Wahl, z.B. Fusilli oder Hörnchennudeln)
– 100 g Cashews
– 600 g bis 700 g Tomaten Passata (etwa 1 große Flasche)
– 1 EL Zitronensaft
– 1 TL Zucker oder 1 EL Agavendicksaft
– 1 TL Salz und etwas Pfeffer
– optional: Paprikapulver, frischer Basilikum und ein paar Cocktailtomaten
Zubereitung
- Nudeln nach Packungsanweisung kochen.
- In der Zwischenzeit Cashews mit den passierten Tomaten, Salz, Zucker und Zitronensaft in einen Hochleistungsmixer geben und etwa 3 min lang richtig schön cremig mixen.
- Mit Salz, Zucker, Pfeffer und nach Geschmack mit etwas Paprikapulver abschmecken.
- Nudelwasser abgießen, die Cashewsauce zu den Nudeln in den Topf geben und alles vermischen.Optional mit Basilikum, Cocktailtomaten sind toll dazu, oder mit Kräutern nach Wahl anrichten.

Das Cesardressing ist super easy und schnell gemacht.
Zutaten
Cesardressing für 500 ml:
– 300 g Joghurt (vegan, ich verwende Kokosjoghurt)
– 4 EL Hefeflocken
– 1/2 TL Senf
– 125 ml Wasser
– 1,5 EL Agavendicksaft
– 1 TL Knoblauch (fein gehackt)
– 3 EL Kräuter (gehackt oder tiefgekühlt: Schnittlauch, Petersilie, Kräuter der Provence …)
– 1 EL Zitronensaft
– Salz und Pfeffer
Alle Zutaten verrühren. Nochmals abschmecken, und in einem sauberen, gut verschließbaren Gefäß aufbewahren. Das Dressing ist gekühlt 5 Tage haltbar.

Usual morning is followed by hustle to make it to college on time. This morning was just another morning yet seemed different.
Witnessing calm and quiet atmosphere, clear and fresh air seemed like a miracle to me. I wanted this time to last longer since I was not sure if I would be able to witness it again, knowing my habit of succumbing to schedule. There was this unusual serenity that comforted my mind. It dawned on me, how distant I had been from nature. Standing near the compound’s gate, feeling the moistness that the air carried, I thought about my life so far.
Your time is limited, so don't waste it living someone else's life. Don't be trapped by dogma – which is living with the results of other people's thinking.

I was good at academics, so decisions of my life had been pretty simple and straight. Being pretty confident I would make it to the best junior college of my town in the first round itself, never made me consider any other option. I loved psychology since childhood, but engineering was the safest option. Being born in a middle class family, thinking of risking your career to make it to medical field was not sane. (English below) Serviettenknödel dürfen in dieser Sammlung an veganen Rezepten auf keinen Fall fehlen!
Serviettenknödel sind den Semmelknödeln sehr ähnlich. Dadurch, dass sie aber in einem Tuch fest eingewickelt gegart werden, gelingen sie einfacher. Das Tuch sorgt nämlich dafür, dass sich die Masse perfekt verbindet und somit auf Ei als Bindemittel verzichtet werden kann. Ich verwende nur etwas Johannisbrotkernmehl und gönne dem Teig ein paar Minuten Ruhezeit, um sich besser zu verbinden.
Zutaten
Für 4 Personen:
– 12 Scheiben Toastbrot (vegan) oder 4 Brötchen
– 130 g Butter (vegan) oder Pflanzenmargarine
– 175 ml Sojamilch (ungesüßt)
– 1 große Gemüsezwiebel
– 1/2 Bund Petersilie
– 1 TL Johannisbrotkernmehl
– Salz, Pfeffer
– optional: frischer Muskat
Zubereitung der veganen Serviettenknödel
- Toastbrot in kleine Stücke reißen oder schneiden, in eine große Schüssel geben und mit Johannisbrotkernmehl mischen.
- Zwiebel fein hacken. Mit etwas von der Butter in der Pfanne braten. Pflanzenmilch, restliche Butter und Petersilie dazugeben, gut salzen und Pfeffern, optional mit frischen Muskat würzen, kurz aufkochen lassen.
- Die Milchmischung über den Brotwürfeln verteilen. Alles gut verrühren. Die Masse 20 min stehen lassen.
- Ein Küchentuch befeuchten und ausbreiten. Die Masse auf das Küchentuch legen und zu einer dicken Rolle formen. In das Küchentuch einrollen und die Enden fest mit einer Küchenschnur schließen. Die Rolle 30 min ruhen lassen, damit sich die Zutaten perfekt verbinden können.
- In einem großen Kochtopf die eingewickelte Rolle 30 Minuten lang leicht köcheln lassen. Nach der Garzeit die Rolle vorsichtig aus dem Wasser nehmen, das Tuch entfernen und den Serviettenknödel in dicke Scheiben schneiden.

Many years ago, I worked for my parents who own a video production company. Because it is a family business, you inevitably end up wearing many hats and being the czar of many different jobs. I mainly managed projects and worked as a video editor. On production, there were times that I was called on to work as an audio tech and was made to wear headphones on long production days. In those days, having a really good set of headphones that picked up every nuance of sound was essential to making sure the client got what they needed. Naturally, my first impression of these headphones is based off of the look of them. They have a classic over-the-ear style that is highlighted by a blue light that indicates the power for the noise canceling. The padding on the ear pieces seems adequate for extended usage periods.
They are wired headphones, but the stereo mini-plug cable is detachable. Something else I noticed right of the bat was the very nice carrying case that comes with them. It has a hard plastic exterior with a soft cloth interior that helps to protect the surface of the headphones from scratches. I never truly appreciated cases for headphones until I started carrying them from place-to-place. Now I can’t imagine not having a case. Once I gave the headphones a thorough once-over exam, I tried them on. As I mentioned, they have a classic over-the-ear style and just looking at them, the padding on the ear pieces seem adequate and the peak of the headband seemed to be a bit lacking, but you don’t really know comfort unless you try on the product. So, I slipped the headphones on and found them to be exquisitely comfortable.
