<li data-section-id="4fko6w" data-start="508" data-end="663">Spargel waschen, Enden entfernen und in einer heißen Grillpfanne mit etwas Olivenöl rundum anrösten, bis er weich ist und leichte Grillspuren bekommt.</li>

<li data-section-id="1jdn4fz" data-start="705" data-end="820">Erdbeeren halbieren und in derselben Pfanne kurz anrösten, bis sie leicht weich werden und etwas Saft abgeben.</li>
<li data-section-id="ttsdnv" data-start="821" data-end="880">Spargel auf Tellern anrichten. Die warmen Erdbeeren samt Saft und der Vinaigrette über den Spargel geben.</li>

<h3>Zubereitung:</h3>
<p><strong>Ofen vorheizen:<br />
</strong>Heize den Ofen auf 190°C vor.</p>
<p><strong>Linsen kochen:<br />
</strong>Spüle die Linsen gründlich unter kaltem Wasser ab.<br />
Gib die Linsen in einen Topf und bedecke sie mit Wasser. Zum Kochen bringen, dann die Hitze reduzieren und ca. 20-25 Minuten köcheln lassen, bis sie zart, aber nicht matschig sind. Abgießen und beiseite stellen.</p>
<p><strong>Zucchinis vorbereiten:<br />
</strong>Während die Linsen kochen, schneide die Oberseiten der runden Zucchinis ab und höhle das Innere mit einem Löffel aus. Wenn du normale Zucchinis verwendest, schneide sie der Länge nach in zwei Hälften und höhle das Innere aus, um &#8222;Boote&#8220; zu formen.<br />
Die ausgehöhlten Zucchinischalen beiseite stellen. Das ausgehöhlte Zucchinifleisch fein hacken und beiseite stellen.</p>
<p><strong>Füllung vorbereiten:<br />
</strong>Die Zwiebel fein hacken.<br />
In einer großen Pfanne die Sonnenblumenkerne bei mittlerer Hitze rösten, bis sie goldbraun sind. Aus der Pfanne nehmen und beiseite stellen.<br />
In derselben Pfanne etwas Olivenöl erhitzen und die gehackte Zwiebel glasig dünsten.<br />
Das gehackte Zucchinifleisch in die Pfanne geben und ein paar Minuten mitdünsten, bis es weich ist.<br />
Die gekochten Linsen, das Tomatenmark, das Paprikapulver, das geräucherte Paprikapulver, die gerösteten Sonnenblumenkerne, die Semmelbrösel und die Hefeflocken einrühren. Gut mischen.<br />
Falls gewünscht, die Kräuter fein hacken und zur Füllung hinzufügen. Mit Salz und Pfeffer abschmecken.</p>
<p><strong>Zucchinis füllen:<br />
</strong>Jede Zucchinischale mit der Linsenfüllung füllen und leicht andrücken, um sie zu füllen.<br />
Die gefüllten Zucchinis in eine Auflaufform setzen. Übrige Füllung einfach in der Auflaufform um die Zucchinis herum verteilen.</p>
<p><strong>Backen:<br />
</strong>Im vorgeheizten Ofen etwa 35-40 Minuten backen, bis die Zucchinis zart sind und die Oberseiten goldbraun sind.</p>

<li>125 ml (1/2 cup) oil (preferably the oil from the jar of sun-dried tomatoes, or neutral vegetable oil such as sunflower or canola oil)</li>
<li>3 flaxseed eggs (3 tbsp flaxseed mixed with 9 tbsp water, let sit for 10 minutes)</li>
<li>125 g sun-dried tomatoes in oil</li>
<li>150 ml (2/3 cup) plant-based milk (e.g., unsweetened almond milk)</li>
<li>2 level tsp baking powder</li>
<li>A pinch of salt</li>
<li>1 tbsp Italian herbs (oregano, basil, thyme)</li>
<li>1 garlic clove</li>
<li>25 g (1/4 cup) nutritional yeast</li>
<li>Pepper to taste</li>
<li>A basil pesto pairs perfectly with these muffins. Find the recipe below.</li>
</ul>
<p><em><strong>Tip</strong>: Since sun-dried tomatoes are usually very salty, a small pinch of salt is sufficient for this recipe.</em></p>
<h3>Instructions:</h3>
<p><strong>Prepare flax eggs:</strong><br />
Mix 3 tbsp ground flaxseed with 9 tbsp water and let it sit for 5-10 minutes until it forms a gel-like consistency.</p>
<p><strong>Prepare the Batter:<br />
</strong>Preheat the oven to 180°C (350°F) and grease muffin tins or line with paper muffin cups.<br />
In a large bowl, combine the flour, baking powder, salt, nutritional yeast, Italian herbs, and pepper.<br />
In a separate bowl, finely puree the oil with the sun-dried tomatoes and garlic clove.<br />
Mix the pureed tomatoes with the flaxseed eggs and plant-based milk.</p>
<p><strong>Combine Ingredients:<br />
</strong>Add the wet ingredients to the dry ingredients and mix gently until just combined.<br />
If the batter appears too dry, add a bit more plant-based milk.</p>
<p><strong>Baking:<br />

<li>2 gestrichene TL Backpulver</li>
<li>Eine Prise Salz</li>
<li>1 EL italienische Kräuter (Oregano, Basilikum, Thymian)</li>
<li>1 Knoblauchzehe</li>
<li>25 g Hefeflocken</li>
<li>Pfeffer nach Geschmack</li>
<li>dazu passt ein Basilikum-Pesto: das Rezept dazu steht weiter unten</li>
</ul>
<p>Tipp: Da eingelegte Tomaten in der Regel sehr salzig sind, genügt es, dem Rezept nur eine kleine Prise Salz zuzufügen.</p>
<h3>Zubereitung:</h3>
<p><strong>Leinsamen-Eier vorbereiten:<br />
</strong>Mische 3 EL geschrotete Leinsamen mit 9 EL Wasser und lass es 5-10 Minuten quellen, bis eine gelartige Konsistenz entsteht.</p>
<p><strong>Teig vorbereiten:<br />
</strong>Ofen auf 180°C vorheizen und Muffinformen einfetten oder mit Papierförmchen auslegen.<br />
Mehl, Backpulver, Salz, Hefeflocken, italienische Kräuter und Pfeffer in einer großen Schüssel vermengen.<br />
In einer separaten Schüssel das Öl mit den Tomaten und der Knoblauchzehe fein pürieren.<br />
Nun die pürierten Tomaten mit den Leinsamen-Eiern und der pflanzlichen Milch gut vermischen.</p>
<p><strong>Zutaten mischen</strong>:<br />
Die feuchten Zutaten zu den trockenen Zutaten geben und vorsichtig mischen, bis gerade alles vermengt ist.<br />
Falls der Teig zu trocken erscheint, noch etwas pflanzliche Milch hinzufügen.</p>
<p><strong>Backen:<br />
</strong>Teig in die vorbereiteten Muffinformen füllen.<br />
Im vorgeheizten Ofen etwa 20-25 Minuten backen, bis ein Zahnstocher sauber herauskommt.<br />
Muffins aus dem Ofen nehmen und in der Form etwa 10 Minuten abkühlen lassen, dann auf einem Gitterrost abkühlen lassen.</p>
<p><em>Die Muffins können warm oder kalt gegessen werden.</em></p>

Basilikum, Pinienkerne, Hefeflocken, Knoblauch, Zitronensaft und Olivenöl in einen Mixer geben und zu einer glatten Paste mixen.<br />
Falls das Pesto zu dick ist, etwas mehr Olivenöl oder einen Spritzer Wasser hinzufügen, bis die gewünschte Konsistenz erreicht ist.</p>
<p><strong>Abschmecken</strong>:<br />
Mit Salz und Pfeffer abschmecken.</p>

<p>Anleitung:</p>
<ol>
<li>Ofen auf 200°C vorheizen.</li>
<li>Mit einem Messer den Stiel des Blumenkohls kürzen.</li>
<li>Blumenkohl in eine Auflaufform stellen.</li>
<li>Wasser in die Form gießen, um 1,5 cm an der Seite zu bedecken.</li>
<li>Die Form fest mit Aluminiumfolie abdecken.</li>
<li>Blumenkohl für 1 Stunde backen oder bis er gerade weich ist.</li>
<li>Folie entfernen.</li>
<li>Nun die geschmolzene Margarine oder vegane Butter mit den Gewürzen in einer kleinen Schüssel mischen.</li>
<li>Die Mischung am besten mit einem Pinsel gleichmäßig über dem Blumenkohl verteilen.</li>
<li>Den Blumenkohl, ohne Abdeckung, für 20 Minuten backen oder bis er leicht gebräunt ist.</li>

<p>Ingredients:</p>

<li>1 cauliflower, leaves removed</li>
<li>50 g plant-based margarine or vegan butter, melted</li>
<li>1 tsp. ground cumin</li>
<li>1 tsp. ground coriander</li>
<li>1 tsp. ground paprika</li>
<li>Salt, to taste</li>
</ul>
<ol>
<li>Preheat your oven to 200°C.</li>
<li>Use a knife to trim the cauliflower stem.</li>
<li>Arrange the cauliflower in a baking dish.</li>
<li>Pour enough water into the dish to come 1.5 cm up the side.</li>
<li>Cover the dish tightly with foil.</li>
<li>Bake for 1 hour, or until the cauliflower is just tender.</li>
<li>Remove the foil.</li>
<li>Mix margarine or butter, coriander, paprika, and cumin in a small bowl.</li>
<li>Brush the butter mixture evenly over the cauliflower.</li>
<li>Bake, uncovered, for 20 minutes or until lightly browned.</li>

<li>In einem großen Topf das Olivenöl bei mittlerer Hitze erhitzen. Die gehackte Zwiebel und den Knoblauch dazugeben und etwa 2-3 Minuten anbraten.</li>
<li>Die gewürfelten Karotten, Sellerie und Kartoffeln in den Topf geben. Weitere 5 Minuten braten lassen, dabei gelegentlich umrühren.</li>
<li>Mit Weißwein ablöschen. Dann den Grünkohl in den Topf geben und mit geschlossenem Deckel 1 Minute garen.</li>
<li>Mit der Gemüsebrühe aufgießen und die Mischung zum Kochen bringen. Hitze reduzieren und das Gemüse etwa 10–15 Minuten köcheln lassen, bis es weich ist.</li>
<li>Mit einem Stabmixer oder besser Hochleistungsmixer die Suppe pürieren, bis sie glatt und cremig ist.<span class="Apple-converted-space"> </span></li>

<li>In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for about 2-3 minutes.</li>
<li>Add the diced carrots, celery and potato to the pot. Cook for another 5 minutes, stirring occasionally.</li>
<li>Add white wine.</li>
<li>Add the chopped kale to the pot. Simmer for 1 minute.</li>
<li>Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to a simmer and cook for about 10-15 minutes, or until the vegetables are tender.</li>
<li>Using an immersion blender, carefully blend the soup until smooth and creamy. Alternatively, you can transfer the soup to a blender to blend until smooth.</li>
<li>Stir in the soy cream and some water if needed. Season the soup with salt and pepper to taste.</li>
</ol>
<p><b>Topping: Caramelized Onions:</b></p>
<ol>
<li> Heat a skillet over medium-low heat. Add the olive oil and let it warm up.</li>

<p><strong>Zubereitung:</strong></p>
<ol>
<li>Alle Zutaten für die Füllung pürieren oder in einen Mixer geben, bis alle Zutaten vermischt sind.</li>
<li>Die Füllung abschmecken und nach Vorliebe nachwürzen.</li>

<h2>Rezept: Veganer Nudelteig</h2>
<p><strong>Zutaten:</strong></p>
<ul>
<li>125 g Mehl</li>
<li>1/2 Teelöffel Salz</li>
<li>1 Esslöffel Olivenöl</li>
<li>1/2 Tasse warmes Wasser (nach Bedarf anpassen)</li>
</ul>
<ol>
<li>In einer großen Rührschüssel Mehl, Salz und Olivenöl vermischen. Nach und nach warmes Wasser unter Rühren hinzufügen, bis sich ein Teig bildet.</li>
<li>Den Teig auf eine bemehlte Fläche geben und 5-7 Minuten kneten, bis er glatt und elastisch ist.</li>
<li>Den Teig zu einer Kugel formen, abdecken und 30 Minuten ruhen lassen.</li>
<li>Den Teig in Portionen teilen und jede Portion auf etwa 3 &#8211; 4 mm Dicke ausrollen.</li>
<li>Den ausgerollten Teig in die gewünschten Formen für die Ravioli schneiden.</li>
<li>Die Füllung in die Mitte eines Teigstücks geben, dabei an den Rändern Platz lassen.</li>
<li>Die Ränder des Teigs anfeuchten und ein weiteres Stück darauf legen. Fest andrücken und verschließen.</li>
<li>Den Vorgang mit dem restlichen Teig und der Füllung wiederholen.</li>
<li>Salzwasser in einem großen Topf zum Kochen bringen und die Ravioli 3-5 Minuten lang kochen.</li>
</ol>
<p>Die gekochten Ravioli aus dem Wasser nehmen und servieren.</p>

<li>2 cups all-purpose flour</li>
<li>1/2 teaspoon salt</li>

<li>1/2 cup warm water (adjust as needed)</li>
</ul>

<li>In a large mixing bowl, combine flour, salt, and olive oil. Gradually add warm water while stirring until a dough forms.</li>
<li>Transfer the dough to a floured surface and knead for 5-7 minutes until smooth and elastic.</li>

<h2>Rezept</h2>
<p>1 kleine Ananas, geschält und entkernt<br />
1 EL Ahornsirup oder Agavensirup<br />
1 EL Limettensaft</p>
<p>Für die Taco-Füllung:<br />
1 EL Olivenöl<br />
1 kleine rote Zwiebel, in dünne Scheiben geschnitten<br />
1 rote Paprika, in dünne Scheiben geschnitten<br />
1 kleine Zucchini, in dünne Scheiben geschnitten<br />
1 Tasse gekochte schwarze Bohnen<br />
1 TL gemahlener Kreuzkümmel<br />
1 TL Chilipulver<br />
Salz und Pfeffer</p>
<p>Zum Servieren:<br />
Taco-Schalen<br />
Frischer Koriander, gehackt<br />
Limettenspalten</p>
<p>Eine Pfanne bei mittlerer Hitze vorheizen.<br />
Ananas in Ringe oder Spalten schneiden. In einer Schüssel Sirup und Limettensaft verrühren. Die Mischung über die Ananasscheiben streichen.<br />
Die Ananasscheiben in der Pfanne von jeder Seite etwa 2-3 Minuten lang braten. Vom Herd nehmen und abkühlen lassen. Nach dem Abkühlen in mundgerechte Stücke schneiden.<br />
In einer Pfanne das Olivenöl bei mittlerer Hitze erhitzen. Geschnittene rote Zwiebeln, Paprika und Zucchini hinzufügen. 5–7 Minuten anbraten, bis das Gemüse weich ist.<br />
Die gekochten schwarzen Bohnen, gemahlenen Kreuzkümmel, Chilipulver, Salz und Pfeffer in die Pfanne geben. Gut umrühren und weitere 2-3 Min. braten.<br />
Die Taco-Schalen gemäß der Packungsanleitung erwärmen.<br />
Zum Füllen der Tacos die Ananas-Gemüse-Füllung in jede Taco-Schale geben. Mit frischem Koriander und einem Spritzer Limettensaft garnieren.<br />
Die Ananas-Tacos sofort servieren und genießen!</p>

<p>1 small pineapple, peeled and cored<br />
1 tbsp maple syrup or agave syrup<br />
1 tbsp lime juice</p>
<p>For the taco filling:<br />
1 tbsp olive oil<br />
1 small red onion, thinly sliced<br />
1 red bell pepper, thinly sliced<br />
1 small zucchini, thinly sliced<br />
1 cup cooked black beans<br />
1 tsp ground cumin<br />
1 tsp chili powder<br />
Salt and pepper</p>
<p>For serving:<br />
Taco shells<br />
Fresh cilantro, chopped<br />
Lime wedges</p>
<p>Preheat a skillet over medium heat.<br />
Slice the pineapple into rings or wedges. In a bowl, whisk together the syrup and lime juice. Brush the mixture over the pineapple slices.<br />
Place the pineapple slices in the skillet and cook for about 2-3 minutes on each side. Remove from heat and let them cool. Once cooled, chop into bite-sized pieces.<br />
In a skillet, heat the olive oil over medium heat. Add the sliced red onion, bell pepper, and zucchini. Sauté for 5-7 minutes until the vegetables are tender.<br />
Add the cooked black beans, ground cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and cook for an additional 2-3 minutes.<br />
Warm the taco shells according to the package instructions.<br />
To assemble the tacos, spoon the pineapple and vegetable filling into each taco shell. Garnish with fresh cilantro and a squeeze of lime juice.<br />
Serve the pineapple tacos immediately and enjoy!</p>

<p id="tw-target-text" class="tw-data-text tw-text-large tw-ta" dir="ltr" data-placeholder="Übersetzung"><span class="Y2IQFc" lang="de">Der Spinat im Garten wächst in letzter Zeit wie verrückt und wir hatten eine riesige Ernte. Bei so viel Spinat wird es in nächster Zeit öfters was damit geben.</span></p>
<h2 style="text-align: left;">Rezept</h2>

<p style="text-align: left;"><strong>4 Portionen:</strong><br />
– 2 mittelgroße Kartoffeln, geschält, in Würfel geschnitten<br />
– 1 Zwiebel, fein gehackt<br />
– 2 Handvoll Spinat<br />
– 200 g schwarze Bohnen (aus der Dose)<br />
– etwas frisch gehackte Petersilie<br />
– 1 EL Olivenöl<br />
– 75 g Feta (vegan), <span class="Y2IQFc" lang="de">zerbröselt</span></p>
<p style="text-align: left;">– 1 EL pflanzliche Milch, ungesüßt<br />
– 1 x Platte Blätterteig (ca. 24 x 40 cm)<br />
– Salz &amp; Pfeffer</p>
<h2 style="text-align: left;">Zubereitung</h2>
<ol>
<li>Backofen auf 180 °C vorheizen (Ober- Unterhitze).</li>
<li>Kartoffeln in Würfel schneiden. In Salzwasser kochen bis sie weich sind.</li>
<li>Zwiebel fein hacken. <span class="Y2IQFc" lang="de">Olivenöl in einer großen Bratpfanne erhitzen. Die Zwiebel darin kochen, bis sie goldbraun ist.</span></li>
<li>Die schwarzen Bohnen, Petersilie und die gekochten Kartoffeln hinzufügen. Die Hitze reduzieren. Gut mischen.</li>
<li>Dann den Feta und den Spinat unterheben, bis der Spinat in sich zusammenfällt.</li>
<li>Den Blätterteig in drei Teile schneiden. Die Mischung entlang der Mitte auf jedem Teil verteilen.</li>
<li>Die Ränder mit etwas pflanzlicher Milch einpinseln. Den Blätterteig um die Füllung schließen, dabei sollte er etwas überlappen.<br />
Nun jede Rolle in drei Stücke schneiden und auf ein mit Backpapier ausgelegtes Blech legen.</li>
<li>Die Oberseite der Rollen mit der restlichen Milch bestreichen. Etwa 30 Minuten lang backen oder bis sie goldbraun sind.</li>

2 EL Olivenöl<br />
2 EL Tomatenmark<br />
1 Dose gewürfelte Tomaten<br />
500 ml Gemüsebrühe<br />
2 EL frische Kräuter (Oregano, Thymian)<br />
Salz und Pfeffer</p>
<p>Zum Servieren: Quinoa oder Pasta<br />
Frische Kräuter zum Garnieren (optional)<br />
Ich toppe es gerne mit einem EL pflanzlichen Joghurt</p>

<p class="tw-data-text tw-text-large tw-ta" dir="ltr" data-placeholder="Übersetzung"><span class="Y2IQFc" lang="de">Das Olivenöl in einem großen Topf bei mittlerer Hitze erhitzen. Zwiebel, Knoblauch, Karotte und Sellerie hinzufügen und kurz anbraten. Tomatenmark, Tomatenwürfel, Gemüsebrühe und Kräuter unterrühren. Mit Salz und Pfeffer würzen. Die Linsen unterrühren und die Sauce zum Kochen bringen. Die Hitze auf eine niedrige Stufe reduzieren und die Sauce etwa 30 Minuten köcheln lassen, bis die Linsen weich und die Sauce eingedickt ist. Bei Bedarf mehr Wasser hinzufügen. Die Linsen-Bolognese über Quinoa oder Nudeln servieren.</span></p>
