Süße Osterhasen Hefe-Brötchen

Zutaten für ca. 3 Backbleche:

– 250ml lauwarme Milch (Hafer, Soja- oder Reismilch, ungesüßt)
– 20 g frische Hefe
– 500 g Mehl (Weizenmehl 1050)
– 75 g Zucker
– 1 Päckchen Vanillezucker
– 75 g weiche Butter (zimmerwarm)
– 1 Prise salz
– etwas flüssige Butter oder Öl zum bepinseln

Ofen auf 175 ° C (Ober- Unterhitze) vorheizen. Hefe in der lauwarmen Milch auflösen. Alle Zutaten in einer Schüssel gut mischen. 5 min. lang zu einem Teig verkneten. Die Schüssel mit dem Teig mit einem Tuch abdecken und 1 Stunde an einem warmen Ort gehen lassen.

Aus dem Teig 15 bis 20 Häschen formen:

Für die Häschen: Von dem Teig je eine Kugel abnehmen und mit den Händen zu einer fingerdicken, ca. 25 cm langen Rolle formen. Die Rolle wie unten abgebildet zu einer Häschen-Form legen. Mit etwas Öl oder Fett mit einem Pinsel an der Oberseite bestreichen.

Für das Schwänzchen: Hagelzucker in eine flache Schale geben. Von dem Teig eine  Kugel nehmen und mit den Händen rund formen. Das Schwänzchen auf einer Seite mit Öl bepinseln und das Schwänzchen in die Schale mit dem Zucker drücken. Schwänzchen an der vorgesehene Stelle auf dem Hasen leicht andrücken.

Häschen auf einem Backblech mit genügend Abstand zueinander platzieren. Ca. 30 min. backen.

Cashew Granola selbstgemacht

Zutaten:

– 1/2 Tasse Cashewnüsse⁠
– 1/2 Tasse Kürbiskerne⁠
– 1 Tasse Haferflocken (weiche Haferflocken verwenden)⁠
– 1 Prise Salz⁠
– 3 EL Sonnenblumenöl⁠
– 3 EL Agavensirup⁠

Ofen auf 155 ° C vorheizen. Alle Zutaten in einer Schüssel gut mischen. Die Masse auf einem Backblech verteilen und 25-30 Minuten backen. Nach der Hälfte der Backzeit das Backblech einmal drehen. Falls das Granola zu dunkel wird, die Temperatur senken.⁠

Das Blech aus dem Ofen nehmen. Wenn das Granola vollständig abgekühlt ist, kann es in einem Glas aufbewahrt werden.

Many years ago, I worked for my parents who own a video production company. Because it is a family business, you inevitably end up wearing many hats and being the czar of many different jobs. I mainly managed projects and worked as a video editor. On production, there were times that I was called on to work as an audio tech and was made to wear headphones on long production days. In those days, having a really good set of headphones that picked up every nuance of sound was essential to making sure the client got what they needed. Naturally, my first impression of these headphones is based off of the look of them. They have a classic over-the-ear style that is highlighted by a blue light that indicates the power for the noise canceling. The padding on the ear pieces seems adequate for extended usage periods.

They are wired headphones, but the stereo mini-plug cable is detachable. Something else I noticed right of the bat was the very nice carrying case that comes with them. It has a hard plastic exterior with a soft cloth interior that helps to protect the surface of the headphones from scratches. I never truly appreciated cases for headphones until I started carrying them from place-to-place. Now I can’t imagine not having a case. Once I gave the headphones a thorough once-over exam, I tried them on. As I mentioned, they have a classic over-the-ear style and just looking at them, the padding on the ear pieces seem adequate and the peak of the headband seemed to be a bit lacking, but you don’t really know comfort unless you try on the product. So, I slipped the headphones on and found them to be exquisitely comfortable.

Now that I had the headphones on my head, I was finally ready to plug and play some music. I plugged the provided cable into the jack on the headphones and then the one on my iPhone. Then I called up Pandora. I tend to have a very eclectic music purview and have many stations set up for different moods. the sound quality of these headphones was remarkable. There is an amazing depth of sound and incredible highs and lows that make listening to music a truly breathtaking experience. In order to test how voices sounded, and the overall art of mixing, I pulled up Netflix on my iPad Air and watched a few minutes of a movie to hear all the nuances of the film.

None of them were lost. In fact, I ended up hearing sounds that I hadn’t heard before. Echoes…birds chirping…wind blowing through trees…breathing of the characters…it was very impressive what the headphones ended up bringing out for me.

Spinat-Crêpes mit Kokos-Mango Füllung

Zutaten für 4 Crêpes:

– 1 Tasse Mehl
– 1 Tasse pflanzliche Milch
– 1 Handvoll Babyspinat

Füllung:
– 1 Mango (oder 1 Tasse TK Mango)
– 1 Dose Kokosmilch (am Vortag kühl stellen, damit sie fest wird!), vollfett
– 2 Bananen (in Scheiben geschnitten)

Für die Crêpes: Milch, Spinat und Mehl kurz in den Mixer geben. Das Mehl als letztes, da es sonst Klumpen geben kann. Mixen bis eine homogene Masse entsteht.

Pfanne mit etwas Öl vorheizen. Jeden Crêpe 1 min. von jeder Seite braten.

Für die Füllung: Mango scheiden und pürieren (tiefgekühlte Mango in einem Kochtopf unter geringer Hitze vorsichtig auftauen, dann pürieren). Die Kokosmilch mit dem Handrührgerät aufschlagen. Jeden Crêpe mit Kokoscreme, Mangosauce und Bananenscheiben füllen.

Veganes Rührei ohne Soja

Veganes Rührei ohne Soja? Jawohl das gibt es, und es wird nur eine Zutat benötigt: Kichererbsenmehl. Das sojafreie vegane Rührei ist vor allem für die Menschen geeignet, die allergisch auf Sojaprodukte reagieren und somit kein Tofu essen dürfen.

Hier habe ich das Rührei in Toastbrotscheiben eingewickelt und nochmal angebraten. Leichter geht es, das Brot einfach damit zu belegen. Schmeckt natürlich auch ohne Brot!

Zutaten für 2:

Für das Rührei:

– 100 g Kichererbsenmehl
– 300 ml Wasser
– 1 Teelöffel Salz
– 1 TL Kurkuma (optional, um die gelbe Farbe hervorzuheben)

Dazu passt:

– 1 Zwiebel (gehackt)
– einige Pilze (gehackt)
– 1 roter Paprika
– Petersilie, Salz und Pfeffer

  1. Wasser in einem Topf zum Kochen bringen, Salz und Kurkuma zufügen. Flamme auf Null stellen und Kichererbsenmehl unter ständigem Rühren einsieben. 3 Minuten rühren.

  2. Die Mischung in eine Auflaufform geben. Wenn es abgekühlt ist, in den Kühlschrank. Nach 3 Stunden – oder über Nacht – ist der Kichererbsen-Tofu (genannt KOFU) bereit fürs Rührei.

  3. Zwiebeln, Pilze und Paprika in einer Pfanne mit Öl anbraten. Kofu hinzufügen und mit dem Pfannenschaber in kleine Stücke hacken und mit anbraten. Salz, Pfeffer und gehackte Petersilie zufügen.

Usual morning is followed by hustle to make it to college on time. This morning was just another morning yet seemed different.

Witnessing calm and quiet atmosphere, clear and fresh air seemed like a miracle to me. I wanted this time to last longer since I was not sure if I would be able to witness it again, knowing my habit of succumbing to schedule. There was this unusual serenity that comforted my mind. It dawned on me, how distant I had been from nature. Standing near the compound’s gate, feeling the moistness that the air carried, I thought about my life so far.

Being pretty confident I would make it to the best junior college of my town in the first round itself, never made me consider any other option. I loved psychology since childhood, but engineering was the safest option. Being born in a middle class family, thinking of risking your career to make it to medical field was not sane. Everything will flow away along with the wind. And you will realize every answer you had been looking for, was always known to you. Heute wird es frühlingshaft, gesund und regional … nämlich mit Kresse von der eigenen Fensterbank.
Kresse ist extrem anspruchslos, benötigt noch nicht einmal Erde. Wie man Kresse selbst anbaut erfährt du hier.

Genauso einfach gelingt dieses vegane Kressesüppchen und versetzt uns in Frühlingsstimmung. Die Kresse fügen wir erst zum Schluß hinzu, damit alle Nährstoffe enthalten werden.

Für 2 Portionen:

– 1 Kästchen Kresse (ca. 30 g)
– 1 kleine Zwiebel
– 1 Kartoffel
– 350 ml Brühe
– 1 EL Zitronensaft
– 1 EL vegane Butter oder Öl
– 30 ml vegane Sahne, Creme Fraiche, oder Joghurt
– Salz, Pfeffer

  1. Zwiebel fein hacken. In Fett dünsten.
  2. Kartoffel in kleine Würfel schneiden. Zur Zwiebel geben und kurz mit dünsten. Mit Brühe ablöschen, solange köcheln, bis die Kartoffelwürfel gar sind.
  3. Kresse waschen. Topf vom Herd nehmen, Kresse dazugeben und alles mit dem Stabmixer pürieren. Evtl. noch etwas Wasser zufügen.
  4. Mit Salz, Pfeffer (vorsichtig) und Zitronensaft abschmecken. Mit der Sahne toppen.

French Pizza mit Frühlingzwiebeln und Äpfeln

Zutaten für ein Backblech

Teig:
– 20 g frische Hefe
– 200 ml warmes Wasser
– 400 g Mehl
– 1 TL Salz
– 1 Prise Zucker
– 4 EL Olivenöl

Crème Fraîche:
– 150 g Cashews (ungesalzen)
– 1 Spritzer Zitronensaft
– 1 TL Salz
– 1 Prise Zucker
– 2 EL Hefeflocken
– ca. 5 EL Wasser

Belag:
– 3 Äpfel
– Saft aus 1/2 Zitrone
– 1 Bund Frühlingszwiebeln
– Kräuter (z.B. Kräuter der Provence)
– Pfeffer

  1. Boden: Hefe im warmen Wasser auflösen. Mehl, Salz und Zucker mischen und mit dem Olivenöl dazugeben. Die Masse zu einem Teig verkneten. Den Teig an einem warmen Ort zugedeckt 1 Stunde gehen lassen.
  2. In der Zwischenzeit den Frischkäse vorbereiten: die eingeweichten Cashews abspülen und abtropfen. Mit 5 EL Wasser in einem Mixer oder einem hohen Gefäß mit dem Stabmixer zu einer cremigen Masse pürieren. Zitronensaft, Salz, Zucker und die Hefeflocken dazugeben. Evtl. weitere 1 bis 2 EL Wasser zufügen, so dass eine streichbare Masse entsteht. Den Frischkäse nach eurem Geschmack mit den Gewürzen nochmals abschmecken.
  3. Belag: die Äpfel vierteln, entkernen und in Spalten schneiden. Mit Zitronensaft beträufeln. Frühlingszwiebeln putzen und in Ringe schneiden.
  4. Den Boden ausrollen und auf ein mit Backpapier ausgelegtes Backblech legen. Den Frischkäse auf dem Teig verstreichen. Mit den Apfelscheiben, Frühlingszwiebeln, Kräutern und etwas Pfeffer belegen.
