Vegan Batida de Coco Cake

For the recipe, I use the clear, non-creamy Batida de Coco liqueur to ensure it is vegan-friendly. The base is made of coconut flour, chia seeds, and flaxseeds.

Ingredients:

Base:

  • 1 1/2 cups coconut flour
  • 3/4 cup oats, ground
  • 1/3 cup mixed seeds (chia, flaxseeds, …)
  • 1/3 cup maple syrup
  • 1/3 cup melted coconut oil
  • 1/3 cup canned coconut milk (shaken well)

Filling:

  • 2 1/4 cups coconut yogurt
  • 1 1/2 cup canned coconut milk (shaken well)
  • 1 1/2 packets (55g) vegan vanilla pudding powder
  • 1/3 cup maple syrup
  • 1/3 cup lime juice
  • 1.5 tbsp lime zest
  • 1.5 tsp vanilla extract
  • 1/3 cup (pure/clear, vegan/non-creamy; or a vegan-friendly coconut liqueur).
  • 1 tsp agar agar powder

Instructions:

Base:

  1. Preheat your oven to 350°F (175°C). Line the bottom of a 26 cm springform pan with parchment paper.
  2. In a bowl, mix the coconut flour, ground oats, and mixed seeds.
  3. Add the melted coconut oil, maple syrup, and water (or canned coconut milk). Mix until well combined.
  4. Press the mixture firmly into the bottom of the prepared pan. Bake for 10-12 minutes or until lightly golden. Allow to cool completely.

Filling:

  1. In a medium saucepan, combine the coconut milk and vegan vanilla pudding powder. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble. Remove from heat and let it cool slightly.
  2. Mix with yogurt, lime juice, zest, vanilla, maple syrup, and Batida de Coco.
  3. In a small saucepan, dissolve agar agar in 1/4 cup water. Bring it to a boil and simmer for about 2 minutes, stirring constantly, until the agar agar is fully dissolved.
  4. Slowly whisk the agar agar mixture into the slightly cooled pudding mixture. Add the combined mixture into the yogurt mixture and mix until fully incorporated.
  5. Pour the filling over the cooled base in the springform pan. Smooth the top with a spatula.
  6. Refrigerate the cake for at least 4 hours, or until fully set.

Serve:

  1. Once set, remove the cake from the springform pan. Garnish with shredded coconut and extra lime zest if desired. Slice and enjoy your delicious Vegan Coconut Lime Cake with a hint of Batida de Coco!

Tips:

  • Agar agar sets at room temperature and doesn’t require refrigeration, but chilling the cake helps develop the flavors and firm up the texture.
  • Ensure all ingredients are at room temperature for smoother mixing.
  • For extra lime flavor, you can add more zest or a few drops of lime extract.

Veganer Batida de Coco Cake

Für das Rezept verwende ich den klaren, nicht cremigen Batida de Coco Likör, um sicherzustellen, dass der Kuchen vegan ist.

Zutaten:

Boden:

  • 175 g Kokosmehl
  • 75 g gemahlene Haferflocken
  • 50 g Chia- und Leinsamen
  • 100 g Ahornsirup
  • 75 g Kokosöl
  • etwa 80 ml Kokosmilch aus der Dose (Dose gut schütteln)

Füllung:

  • 2 1/4 Tassen Kokosjoghurt
  • 1 1/2 Tassen Kokosmilch aus der Dose (gut geschüttelt)
  • 1 1/2 Päckchen (55 g) veganes Vanillepuddingpulver
  • 1/3 Tasse Ahornsirup
  • 1/3 Tasse Limettensaft
  • 1 1/2 EL Limettenschale
  • 1 1/2 TL Vanilleextrakt
  • 1/3 Tasse Batida de Coco (klar, vegan; oder ein veganer Kokoslikör)
  • 1 TL Agar-Agar-Pulver

Boden:

  1. Ofen auf 175°C vorheizen. Den Boden einer 26 cm Springform mit Backpapier auslegen.
  2. Kokosmehl, gemahlene Haferflocken und gemischte Samen in einer Schüssel vermischen.
  3. Geschmolzenes Kokosöl, Ahornsirup und Kokosmilch hinzufügen. Gut mischen.
  4. Die Mischung fest auf den Boden der vorbereiteten Form drücken. 10-12 Minuten backen oder bis sie leicht goldbraun ist. Komplett abkühlen lassen.

Füllung:

  1. Kokosjoghurt, Ahornsirup, Limettensaft, Limettenabrieb, Vanille und Kokoslikör in einer großen Schüssel verrühren.
  2. Kokosmilch und Puddingpulver in einem Topf klümpchenfrei verrühren. Unter ständigem Rühren erhitzen, bis die Masse eindickt und blubbert.
  3. Agar-Agar mit 60 ml Wasser in einem kleinen Topf verrühren, aufkochen und etwa zwei Minuten köcheln lassen.
  4. Die heiße Agar-Mischung gründlich in die noch warme Puddingmasse rühren.
  5. Die Puddingmasse nach und nach unter die Joghurtmischung rühren.
  6. Sofort auf dem abgekühlten Boden verteilen. Mit einem Spatel glatt streichen.
  7. Den Kuchen mindestens 6 Stunden, oder besser über Nacht, im Kühlschrank kühlen.

Servieren:

  1. Sobald der Kuchen fest ist, aus der Springform nehmen. Mit Kokosraspeln und zusätzlicher Limettenschale garnieren, falls gewünscht. Anschneiden und genießen!

Tipps:

  • Agar-Agar geliert bei Raumtemperatur und benötigt keine Kühlung, aber das Kühlen des Kuchens hilft, die Aromen zu entwickeln und die Textur zu festigen.
  • Stellen Sie sicher, dass alle Zutaten Zimmertemperatur haben, um ein gleichmäßigeres Mischen zu gewährleisten.
  • Für zusätzlichen Limettengeschmack können Sie mehr Schale oder ein paar Tropfen Limettenextrakt hinzufügen.
