Hummingbird Muffins mit Zimt & Ingwer

Rezept

12 Cupcakes

Für den Teig:

250 g Mehl
75 g Zucker
75 g Kokosblützenzucker
50 g Kokosraspeln
3 gestrichene TL Backpulver
100 g Walnüsse, gehackt (alternativ Kürbiskerne)
350 g Ananas aus der Dose (in Scheiben oder Stücke)
2 reife Bananen
175 ml Raps- oder Sonnenblumenöl
1 TL Zimt, gemahlen
1/2 TL Ingwer, gemahlen

Für die Creme:

300 g vegane Frischecreme
2 EL Ananassaft (Flüssigkeit aus der Dose)
4 EL Puderzucker
Abrieb von 1/2 Biozitrone

Topping:

2 EL Kokosflocken

 

ZUBEREITUNG

Ofen auf 180°C Ober- Unterhitze vorheizen.

Mehl, Zucker, Kokosraspeln, Nüsse, Backpulver, Zimt und Ingwer in einer großen Schüssel vermengen.

Bananen und Ananas (2 EL von der Flüssigkeit für die Creme aufbewahren) zu Mus verarbeiten, dann mit Öl vermengen. 

Nun beide Mischungen gut vermengen. Die Masse in eine gefettete Muffinform füllen. Im Ofen 35 Minuten backen. Cupcakes in der Form abkühlen lassen. 

Creme: Alle Zutaten für die Creme verrühren. 

Topping: Die Kokosflocken für das Topping in einer Pfanne anrösten. 

Cupcakes mit etwas Creme bestreichen, dann mit Kokosflocken bestreuen.

 

Ananas Blumen

Für die Blüten sehr feine Scheiben von einer Ananas schneiden. Den Rand entfernen. 

Mit einem Küchentuch die Flüssigkeit abtupfen. Die Scheiben auf einem mit Backpapier ausgelegtem Blech im Ofen bei 90°C (Ober- Unterhitze) ca. 120 Minuten trocknen, bis die Scheiben einen braunen Rand bekommen. 

Die Ananas aus dem Ofen nehmen und jede Scheibe in eine Vertiefung eines Muffinblechs legen um sie beim Abkühlen zu formen.

RECIPE

(12 Muffins)

For the dough:

250 g flour
3 tsp baking powder
75 g sugar
75 g coconut blossom sugar
50 g grated coconut
100 g walnuts, chopped (alternatively pumpkin seeds)
350 g canned pineapple (slices ​​or chunks)
2 ripe bananas
175 ml canola or sunflower oil
1 tsp ground cinnamon
1/2 tsp ginger, ground

For the frosting:

300 g vegan fresh cream
2 tbsp pineapple juice (canned liquid)
4 tbsp powdered sugar
Zest of 1/2 organic lemon

Topping:

2 tbsp coconut flakes

METHOD

Preheat the oven to 180°C top and bottom heat.

In a large bowl, combine flour, sugar, shredded coconut, nuts, baking powder, cinnamon, and ginger.

Mash the bananas and pineapple (reserve 2 tbsp of the liquid for the frosting), then combine with oil.

Now combine both mixtures well. Pour the batter into a greased muffin pan. Bake in the oven for 35 minutes. Leave muffins to cool in the pan.

Frosting: Mix together all the ingredients.

Topping: Roast the coconut flakes for the topping in a pan.

Spread some cream on the muffins, then sprinkle with coconut flakes.

 

Pineapple Flowers

For the flowers, cut very thin slices from a pineapple. Remove the edge. Dab off the liquid with a kitchen towel. Dry the slices on a tray lined with baking paper in the oven at 90°C (top and bottom heat) for approx. 120 minutes until the slices have brown edges. Remove the pineapple from the oven and place into muffin tin cups to shape them as they cool.

Rezept

 

Ergibt etwa 16 Stück:

  • 1,2 kg Äpfel
  • 450 g Mehl
  • 1/2 TL Backmehl
  • 1 kleine Prise Salz
  • 75 g Zucker
  • 50 g Kokosblütenzucker + 2 EL für die Füllung
  • 75 g Kokosnussflocken
  • 300 g pflanzliche Margarine
  • 50 g Haferflocken
  • 1 EL Zimt

Zubereitung

Mehl, Backpulver, Kokosflocken, Salz, Zucker und Kokosblütenzucker mischen. 250 g Margarine zugeben und zu einem krümeligen Teig verarbeiten.

Backofen auf 180°C (160°C Umluft) vorheizen.

Eine ca. 20 x 30 cm Auflaufform mit Backpapier auslegen.
2/3 des Teigs in die Form drücken. 25 Min lang backen.

In der Zwischenzeit die Apfelfüllung zubereiten: Äpfel schälen, entkernen und in kleine Würfel schneiden. 20 g Margarine in eine Bratpfanne geben. Apfelwürfel, 2 EL Kokosblütenzucker und Zimt zugeben. 15 bis 20 Minuten braten.

Die fertige Apfelmischung auf den Kuchenboden geben.

Nun die Streusel zubereiten: Haferflocken und 30 g Margarine zu der übrigen Streusel-Mischung geben. Alles vermengen und über die Apfelfüllung streuen.

Den Kuchen im Backofen 35 Minuten backen.

Zucchini mit Linsen "Hack" Füllung

Zucchini mit Linsen-Hack-Füllung, rein pflanzlich, mit wenigen Zutaten.

Das Rezept ergibt etwa 500 g Hackmasse (nicht angebraten) und reicht für 4 Personen. Die Masse ist gut vorzubereiten und eignet sich auch perfekt zum Füllen von Paprikas, Tomaten, in Burritos oder Tacos.

Für 500 g rein pflanzliche Hackmasse benötigt ihr:

Linsen Hack Rezept:

– 150 g braune oder grüne Linsen (eine festkochende Sorte verwenden)
– 1 Zwiebel
– 50 g Sonnenblumenkerne
– 1,5 TL Paprikapulver (mild)
– Messerspitze Paprikapulver, geräuchert
– 3 EL Semmelbrösel
– 3 EL Hefeflocken
– optional: frisch gehackte Petersilie

Zubereitung

  1. Linsen nach Packungsanweisung kochen. Sie sollten nach dem Kochen noch etwas „Biss“ haben.
    Linsen durch ein Sieb abseihen.
  2. Zwiebel fein hacken. Sonnenblumenkerne in einer Küchenmaschine zerkleinern, aber nicht zu Mehl verarbeiten.
  3. Alle Zutaten in einer großen Schüssel gut vermengen. Pfeffern und gut salzen.
  4. Um die richtige Textur zu erhalten, nehmen wir nun die Hälfte der Masse und füllen sie in eine zweite Schüssel, und bearbeiten sie mit einem Stabmixer. Danach werden beide Massen (also die pürierte und die nicht pürierte) wieder vermengt. Optional frisch gehackte Petersilie untermischen.
  5. Die Masse wird jetzt in einer Pfanne mit etwas Fett angebraten, dabei mehrmals wenden, bis sie leicht trocken wird. Dazu die Masse am Besten auf zwei- oder sogar dreimal aufteilen. Ihr könnt nun abschmecken und ggfl. nachwürzen.

Nach Belieben können auch getrocknete Tomaten oder etwas gekochter Reis unter das Hack gemischt werden, oder alles am Schluß mit veganem Käse toppen.

 

Gefüllte Zucchinis:

Für 4 Personen:

Hackmasse wie oben beschrieben zubereiten.

Außerdem benötigt ihr:
– entweder eine große, lange Zucchini, oder 4 kleine runde Zucchini

Für die Tomatensauce:
– 500 ml Tomatenpassata
– 1 Knoblauchzehe
– Paprikapulver, Salz und Pfeffer
– 1 Prise Zucker oder etwas Agavendicksaft

Joghurtsauce:
– 300 g pflanzlicher Joghurt
– 1 Spritzer Zitronensaft
– 2 Knoblauchzehen
– 1 EL Olivenöl
– Salz & Pfeffer

Die Zucchini aufschneiden, die Kerne mit einem Löffel entfernen. Mit Salz und Pfeffer würzen. Dann mit der Hackmasse füllen.

Die Tomatenpassata mit Salz, Pfeffer, Paprikapulver und Zucker in einer Schüssel würzen. Knoblauch fein hacken und dazugeben.

Zucchini in eine Auflaufform setzen, die Tomatensauce darum verteilen und im vorgeheizten Ofen bei 175°C Ober- Unterhitze 40 Minuten lang backen. Sollten es oben zu dunkel werden, die Temperatur etwas reduzieren.

Ingredients:

  • 4 large tortillas
  • 1 large sweet potato, cubed
  • 1 can black beans, drained and rinsed
  • 1/2 red onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 pineapple, cubed
  • 1 cucumber, cubed
  • 1 red bell pepper, cubed
  • Green lettuce leaves
  • 1 tsp turmeric
  • Salt & pepper
  • Optional: 1 tbsp balsamic vinegar or lime juice

Avocado Mash:

  • 2 avocados, mashed
  • 1 tbsp lemon juice
  • Salt & pepper

Instructions:

  1. Sweet Potato: Microwave sweet potato cubes for 3 minutes or until tender. Mash with garlic, turmeric, salt, and pepper. Add a splash of balsamic vinegar or lime juice if desired.
  2. Veggies: Prepare all veggies and rinse the black beans.
  3. Avocado Mash: Mash avocados with lemon juice, salt, and pepper.
  4. Tortillas: Warm tortillas in a microwave or dry skillet.
  5. Assemble: Spread sweet potato mash on each tortilla, top with beans, veggies, and avocado mash.
  6. Wrap and Enjoy: Roll up the tortillas and savor every delightful bite!

Just like every other human on the planet, I have epically awesome days and days when life just turne against me. And while I can’t stand most self-help (see: tired quotes over stock photography on Instagram), sometimes I need a little pick-me-up. And most of the time, in order to get out of a slump (because my brain leans more into math/science than anything else), I need to drop a logic bomb on my ass.

Yes, this is a long article. But here’s the thing — if you’re reading this in your inbox and are already like, “fuck this!” delete it. No hard feelings. If you’re reading this in a browser on a website, and you see how tiny the scroll-bar is because of how far you still have to scroll to get to the bottom, close this tab and go back to 140-character tidbits of advice. Still with me? Phew. Just had to weed out all the folks from points: #1, #4 and #8. Welcome friends, onward we go.

Let me elaborate on that a bit better. You’ll get better at each section of what we talked about slowly. And while you do, you’ll be amazed at how much easier it all is and how the habit forms. The best way to get better at photography is start by taking your camera everywhere. If you leave your house, your camera leaves with you. The only exception is if you’re planning for a weekend bender — then probably leave it at home. Other than that, always have it slung over your shoulder. It would probably help to get an extra battery to carry in your pocket. I’ve got three batteries. One in my camera, one in my pocket, one in the charger.

When it dies, swap them all.

For me, the most important part of improving at photography has been sharing it. Sign up for an Exposure account, or post regularly to Tumblr, or both. How to Appreciate the Little Things in Life and be Happy

Just the other day I happened to wake up early. That is unusual for an engineering student. After a long time I could witness the sunrise. I could feel the sun rays falling on my body. Usual morning is followed by hustle to make it to college on time. This morning was just another morning yet seemed different.

Witnessing calm and quiet atmosphere, clear and fresh air seemed like a miracle to me. I wanted this time to last longer since I was not sure if I would be able to witness it again, knowing my habit of succumbing to schedule. There was this unusual serenity that comforted my mind. It dawned on me, how distant I had been from nature. Standing near the compound’s gate, feeling the moistness that the air carried, I thought about my life so far.

Your time is limited, so don't waste it living someone else's life. Don't be trapped by dogma – which is living with the results of other people's thinking.

I was good at academics, so decisions of my life had been pretty simple and straight. Being pretty confident I would make it to the best junior college of my town in the first round itself, never made me consider any other option. I loved psychology since childhood, but engineering was the safest option. Being born in a middle class family, thinking of risking your career to make it to medical field was not sane. I grew up hearing ‘Only doctor’s children can afford that field’ and finally ended up believing it. No one around me believed in taking risks. Everyone worshiped security. I grew up doing the same.

‘Being in the top will only grant you a good life’ has been the mantra of my life. But at times, I wish I was an average student. I wish decisions would have not been so straightforward. Maybe I would have played cricket- the only thing I feel passionate about. Or maybe I would have studied literature (literature drives me crazy). Isn’t that disappointing- me wishing to be bad at academics. It’s like at times I hate myself for the stuff I am good at.

When you step out of these four walls on a peaceful morning, you realize how much nature has to offer to you. Its boundless. Your thoughts, worries, deadlines won’t resonate here. Everything will flow away along with the wind. And you will realize every answer you had been looking for, was always known to you. Macadamia-Kokos-Limette-Mango-Granola

Der zusätzliche Zucker kann weggelassen werden kann, da die getrocknete Mango bereits natürliche Süße enthält. Wer es süßer mag kombiniert das Granola hinterher mit süßem Obst wie Bananen. Dazu passt pflanzlicher Joghurt, pflanzliche Milch und Früchte.

Für das Foto haben habe die Granola-Mischung einfach mit Kokosjoghurt und Kiwis geschichtet, und für eine interessante Abwechslung mit Basilikumblättern getoppt.

Macadamia, getrocknete Mango und Kokos Chips von Farmer’s Snack. 

Rezept

  • vegan

  • auch ohne zusätzlichen Zucker möglich
  • gut aufzubewahren

4 Portionen:
– 75 g Macadamia 
– 75 g Haferflocken
– 50 g Sonnenblumenkerne
– 30 g Kokos Chips
– 50 g getrocknete Mango
– 1/2 Limette (Saft und Schale)
– 30 g Kokosöl
– 1,5 EL Zucker (optional)

Zubereitung

1. Ofen auf 160°C vorheizen (Ober-/Unterhitze).

2. Macadamia, Mango und die Kokos Chips sehr grob hacken. 

3. Kokosöl langsam im Wasserbad schmelzen. Den Zucker (optional) einrühren. 

4. In einer großen Schüssel die Macadamia, Haferflocken, Sonnenblumenkerne, Kokosöl, und den Saft und Abrieb der Limette vermischen.

5. Granolamischung auf einem Backblech verteilen. Im Ofen 10 Minuten backen, dann das Granola wenden und wieder 10 Minuten backen. Nun die Kokosflocken darüber streuen und weitere 3 Minuten backen. 

6. Granola aus dem Ofen nehmen, abkühlen lassen. Dann die Mangostücke unterheben.

Rezept

4 Portionen / 4 Pizza-Schiffchen
Zubehör:
Mixer oder Stabmixer für das Hummus

Pizzateig:
– 400 g Mehl
– 20 g frische Hefe
– 1 Prise Zucker
– 1,5 TL Salz
– 225 ml warmes Wasser
– 3 EL (gutes) Olivenöl

Belag:
– 1 Dose Kichererbsen (400 g / netto ca. 240 g), abgetropft
– 500 g Tiefkühl-Erbsen
– 50 g Zuckerschoten
– 4 Knoblauchzehen, gehackt
– 2 Zwiebeln, in Ringe geschnitten
– 4 Frühlingszwiebeln, in Ringe geschnitten
– Zitronensaft
– ein paar frische Kräuter wie Petersilie, Thymian oder Oregano
– 1 EL Olivenöl
– Salz & Pfeffer

Zubereitung

Für den Pizzateig das Mehl mit dem Salz in einer großen Schüssel vermengen. Zucker in warmes Wasser geben und die Hefe darin auflösen. Hefe-Wasser und Öl zum Mehl geben. Alles gut zu einem Teig verkneten und abgedeckt an einem warmen Ort 1 Stunden gehen lassen.

Für den Pizzabelag die Erbsen und Zuckerschoten 3 Minuten in kochendem Wasser blanchieren. Unter kaltem Wasser abschrecken, gut abtropfen. Die Zuckerschoten und 1/3 der Erbsen für später zur Seite stellen.

Hummus:
die übrigen 2/3 der Erbsen zusammen mit den Kichererbsen, Knoblauch und Kräutern in einem Mixer cremig pürieren. Mit Zitronensaft, Salz und Pfeffer abschmecken (gut würzen!).

Den Pizzateig auf einer bemehlten Fläche zu 4 Schiffchen ausrollen. Auf einem Backblech platzieren. Nun mit dem Hummus bestreichen und mit Zwiebeln und Frühlingszwiebeln belegen. Dabei einen Rand frei lassen. Den Rand nach oben klappen. Mit den restlichen Erbsen und den Zuckerschoten belegen. Mit Salz und Pfeffer würzen.

Im unteren Drittel des Ofens bei 200°C (Ober- Unterhitze) 30 Minuten lang backen.

Kaffee Walnuss Bananen Kuchen mit Karamell-Sauce

Rezept

Kuchen:
– 350 g Mehl
– 2 TL Backpulver
– 2 große, reife Bananen
– 100 g Walnüsse, gehackt oder gemahlen
– 130 g Zucker
– 125 ml neutrales Pflanzenöl
– 3 starke Espresso (120 ml)
– 150 ml Sahne (vegan, z.B. Sojasahne)
– etwas Öl für die Kuchenform

Karamell-Sauce
–100 ml Sahne (vegan, z.B. Sojasahne)
– 4 EL Zucker

Zubereitung

Ofen auf 180 °C vorheizen (Ober- Unterhitze)

Mehl mit Backpulver in einer großen Schüssel mischen.

Bananen mit einer Gabel zu Mus zerdrücken.

Öl, Zucker, Sahne, Bananen und Walnüsse verrühren. Nun die Mischung zur Mehlmischung geben. Solange rühren, bis alle Zutaten feucht sind.

Eine Kuchenform einfetten und mit etwas Mehl bestäuben. Den Teig einfüllen. Im Ofen 45 Minuten backen.

Karamellsauce

Für die Karamellsauce die Sahne mit dem Zucker kurz aufkochen. Bei niedriger Temperatur 20 Minuten köcheln lassen, bis die Sauce eingedickt. Die Sauce kann warm zum Kuchen serviert werden, oder die Sauce ein paar Minuten stehen lassen, bis sie zähflüssig wird. Dann den gesamten Kuchen damit toppen und fest werden lassen.
