Vegan Caribbean Wraps

Ingredients:

  • 4 large tortillas
  • 1 large sweet potato, cubed
  • 1 can black beans, drained and rinsed
  • 1/2 red onion, thinly sliced
  • 2 garlic cloves, minced
  • 1/2 pineapple, cubed
  • 1 cucumber, cubed
  • 1 red bell pepper, cubed
  • Green lettuce leaves
  • 1 tsp turmeric
  • Salt & pepper
  • Optional: 1 tbsp balsamic vinegar or lime juice

Avocado Mash:

  • 2 avocados, mashed
  • 1 tbsp lemon juice
  • Salt & pepper

Instructions:

  1. Sweet Potato: Microwave sweet potato cubes for 3 minutes or until tender. Mash with garlic, turmeric, salt, and pepper. Add a splash of balsamic vinegar or lime juice if desired.
  2. Veggies: Prepare all veggies and rinse the black beans.
  3. Avocado Mash: Mash avocados with lemon juice, salt, and pepper.
  4. Tortillas: Warm tortillas in a microwave or dry skillet.
  5. Assemble: Spread sweet potato mash on each tortilla, top with beans, veggies, and avocado mash.
  6. Wrap and Enjoy: Roll up the tortillas and savor every delightful bite!

Zutaten:

  • 4 große Tortillas

Avocado-Mash:

  • 2 Avocados, zerdrückt
  • 1 EL Zitronensaft
  • Salz & Pfeffer

Zubereitung:

    1. Süßkartoffel: Süßkartoffelwürfel 3 Minuten in der Mikrowelle garen oder bis sie weich sind. Mit Knoblauch, Kurkuma, Salz und Pfeffer zerdrücken. Optional einen Schuss Balsamico-Essig oder Limettensaft hinzufügen.
    2. Gemüse: Das gesamte Gemüse vorbereiten und die schwarzen Bohnen abspülen.
    3. Avocado-Mash: Avocados mit Zitronensaft, Salz und Pfeffer zerdrücken.
    4. Tortillas: Tortillas in der Mikrowelle oder in einer fettfreien Pfanne kurz erwärmen.
    5. Wraps Zusammenstellen: Süßkartoffelmus auf jede Tortilla streichen, mit Bohnen, Gemüse und Avocado-Mash belegen.
    6. Wraps und Genießen: Die Tortillas fest einrollen und jeden bunten, köstlichen Bissen genießen!

Blätterteig-Muffins mit Zucchini-Spargel-Füllung

Rezept

Ergibt 6 Stück:

– 6 Blätterteig-Stücke (ca. 12 x 12 cm groß und quadratisch)
– 1 große Zucchini
– 6 Stangen grüner Spargel
– 6 EL Kichererbsenmehl
– 3 EL pflanzlicher Joghurt (neurtal)
– 100 g veganer Feta
– Ein paar Stängel frische Kräuter (Thymian oder Oregano)
– Salz & Pfeffer
– etwas Öl für das Muffinblech

Zubereitung

Muffinform mit etwas Öl einfetten. Blätterteig in den Vertiefungen platzieren. 

Feta klein schneiden. Feta, Kichererbsenmehl, Joghurt, Kräuter zusammen mit etwas Wasser verrühren, so dass ein Brei entsteht. Mit Salz und Pfeffer würzen. Die Masse in die mit Blätterteig ausgelegten Formen füllen. 

Spargel waschen, ggfl. schälen und in kurze Stücke schneiden. 

Zucchini schälen. Mit einem Sparschäler breite dünne Streifen abschneiden. Je 5 Streifen aufeinanderlegen und zusammenrollen. Je eine „Zucchini-Rolle“ und den Spargel auf den Muffins verteilen. 

Salzen und pfeffern. Im Ofen bei 200° C Ober-Unterhitze 25 Minuten lang backen.

Let me elaborate on that a bit better. You’ll get better at each section of what we talked about slowly. And while you do, you’ll be amazed at how much easier it all is and how the habit forms. The best way to get better at photography is start by taking your camera everywhere. If you leave your house, your camera leaves with you. The only exception is if you’re planning for a weekend bender — then probably leave it at home. Other than that, always have it slung over your shoulder. It would probably help to get an extra battery to carry in your pocket. I’ve got three batteries. One in my camera, one in my pocket, one in the charger.

When it dies, swap them all.

For me, the most important part of improving at photography has been sharing it. Sign up for an Exposure account, or post regularly to Tumblr, or both. How to Appreciate the Little Things in Life and be Happy

Just the other day I happened to wake up early. That is unusual for an engineering student. After a long time I could witness the sunrise. I could feel the sun rays falling on my body. Usual morning is followed by hustle to make it to college on time. This morning was just another morning yet seemed different.

Witnessing calm and quiet atmosphere, clear and fresh air seemed like a miracle to me. I wanted this time to last longer since I was not sure if I would be able to witness it again, knowing my habit of succumbing to schedule. There was this unusual serenity that comforted my mind. It dawned on me, how distant I had been from nature. Standing near the compound’s gate, feeling the moistness that the air carried, I thought about my life so far.

Your time is limited, so don't waste it living someone else's life. Don't be trapped by dogma – which is living with the results of other people's thinking.

I was good at academics, so decisions of my life had been pretty simple and straight. Being pretty confident I would make it to the best junior college of my town in the first round itself, never made me consider any other option. I loved psychology since childhood, but engineering was the safest option. Being born in a middle class family, thinking of risking your career to make it to medical field was not sane. I grew up hearing ‘Only doctor’s children can afford that field’ and finally ended up believing it. No one around me believed in taking risks. Everyone worshiped security. I grew up doing the same.

‘Being in the top will only grant you a good life’ has been the mantra of my life. But at times, I wish I was an average student. I wish decisions would have not been so straightforward. Maybe I would have played cricket- the only thing I feel passionate about. Or maybe I would have studied literature (literature drives me crazy). Isn’t that disappointing- me wishing to be bad at academics. It’s like at times I hate myself for the stuff I am good at.

When you step out of these four walls on a peaceful morning, you realize how much nature has to offer to you. Its boundless. Your thoughts, worries, deadlines won’t resonate here. Everything will flow away along with the wind. And you will realize every answer you had been looking for, was always known to you. Macadamia-Kokos-Limette-Mango-Granola

(dieses schöne Rezept entstand für Farmer’s Snack / Werbung)

Der zusätzliche Zucker kann weggelassen werden kann, da die getrocknete Mango bereits natürliche Süße enthält. Wer es süßer mag kombiniert das Granola hinterher mit süßem Obst wie Bananen. Dazu passt pflanzlicher Joghurt, pflanzliche Milch und Früchte.

Für das Foto haben habe die Granola-Mischung einfach mit Kokosjoghurt und Kiwis geschichtet, und für eine interessante Abwechslung mit Basilikumblättern getoppt.

Macadamia, getrocknete Mango und Kokos Chips von Farmer’s Snack. 

Rezept

  • gut aufzubewahren

4 Portionen:
– 75 g Macadamia 
– 75 g Haferflocken
– 50 g Sonnenblumenkerne
– 30 g Kokos Chips
– 50 g getrocknete Mango
– 1/2 Limette (Saft und Schale)
– 30 g Kokosöl
– 1,5 EL Zucker (optional)

Zubereitung

1. Ofen auf 160°C vorheizen (Ober-/Unterhitze).

2. Macadamia, Mango und die Kokos Chips sehr grob hacken. 

3. Kokosöl langsam im Wasserbad schmelzen. Den Zucker (optional) einrühren. 

4. In einer großen Schüssel die Macadamia, Haferflocken, Sonnenblumenkerne, Kokosöl, und den Saft und Abrieb der Limette vermischen.

5. Granolamischung auf einem Backblech verteilen. Im Ofen 10 Minuten backen, dann das Granola wenden und wieder 10 Minuten backen. Nun die Kokosflocken darüber streuen und weitere 3 Minuten backen. 

6. Granola aus dem Ofen nehmen, abkühlen lassen. Dann die Mangostücke unterheben.

Erbsen-Hummus Pizza-Schiffchen

Rezept

4 Portionen / 4 Pizza-Schiffchen
Zubehör:
Mixer oder Stabmixer für das Hummus

Pizzateig:
– 400 g Mehl
– 20 g frische Hefe
– 1 Prise Zucker
– 1,5 TL Salz
– 225 ml warmes Wasser
– 3 EL (gutes) Olivenöl

Belag:
– 1 Dose Kichererbsen (400 g / netto ca. 240 g), abgetropft
– 500 g Tiefkühl-Erbsen
– 50 g Zuckerschoten
– 4 Knoblauchzehen, gehackt
– 2 Zwiebeln, in Ringe geschnitten
– 4 Frühlingszwiebeln, in Ringe geschnitten
– Zitronensaft
– ein paar frische Kräuter wie Petersilie, Thymian oder Oregano
– 1 EL Olivenöl
– Salz & Pfeffer

Zubereitung

Für den Pizzateig das Mehl mit dem Salz in einer großen Schüssel vermengen. Zucker in warmes Wasser geben und die Hefe darin auflösen. Hefe-Wasser und Öl zum Mehl geben. Alles gut zu einem Teig verkneten und abgedeckt an einem warmen Ort 1 Stunden gehen lassen.

Für den Pizzabelag die Erbsen und Zuckerschoten 3 Minuten in kochendem Wasser blanchieren. Unter kaltem Wasser abschrecken, gut abtropfen. Die Zuckerschoten und 1/3 der Erbsen für später zur Seite stellen.

Hummus:
die übrigen 2/3 der Erbsen zusammen mit den Kichererbsen, Knoblauch und Kräutern in einem Mixer cremig pürieren. Mit Zitronensaft, Salz und Pfeffer abschmecken (gut würzen!).

Den Pizzateig auf einer bemehlten Fläche zu 4 Schiffchen ausrollen. Auf einem Backblech platzieren. Nun mit dem Hummus bestreichen und mit Zwiebeln und Frühlingszwiebeln belegen. Dabei einen Rand frei lassen. Den Rand nach oben klappen. Mit den restlichen Erbsen und den Zuckerschoten belegen. Mit Salz und Pfeffer würzen.

Im unteren Drittel des Ofens bei 200°C (Ober- Unterhitze) 30 Minuten lang backen.

Kaffee Walnuss Bananen Kuchen mit Karamell-Sauce

Rezept

  • vegan

Kuchen:
– 350 g Mehl
– 2 TL Backpulver
– 2 große, reife Bananen
– 100 g Walnüsse, gehackt oder gemahlen
– 130 g Zucker
– 125 ml neutrales Pflanzenöl
– 3 starke Espresso (120 ml)
– 150 ml Sahne (vegan, z.B. Sojasahne)
– etwas Öl für die Kuchenform

Karamell-Sauce
–100 ml Sahne (vegan, z.B. Sojasahne)
– 4 EL Zucker

Zubereitung

Ofen auf 180 °C vorheizen (Ober- Unterhitze)

Mehl mit Backpulver in einer großen Schüssel mischen.

Bananen mit einer Gabel zu Mus zerdrücken.

Öl, Zucker, Sahne, Bananen und Walnüsse verrühren. Nun die Mischung zur Mehlmischung geben. Solange rühren, bis alle Zutaten feucht sind.

Eine Kuchenform einfetten und mit etwas Mehl bestäuben. Den Teig einfüllen. Im Ofen 45 Minuten backen.

Karamellsauce

Für die Karamellsauce die Sahne mit dem Zucker kurz aufkochen. Bei niedriger Temperatur 20 Minuten köcheln lassen, bis die Sauce eingedickt. Die Sauce kann warm zum Kuchen serviert werden, oder die Sauce ein paar Minuten stehen lassen, bis sie zähflüssig wird. Dann den gesamten Kuchen damit toppen und fest werden lassen.

Rezept

  • kann am Vortag zubereitet werden

6 Stück:

6 Burger Brötchen
1 Kartoffel (am besten vom Vortag)
1 Zwiebel (fein geschnitten)
2 Knoblauchzehen (fein gehackt)
200 g braune Champigons (fein gehackt)
1 Dose schwarze Bohnen (400 g / ca. 240 g netto)
70 g Sonnenblumenkerne oder Walnüsse (gehackt)
3 EL Petersilie, gehackt
2 EL Kartoffel- oder Maisstärke
2 TL Paprikapulver, edelsüß
1/2 TL Salz
Pfeffer
Öl

Belag nach Belieben:
z.B… 

Salatblätter
Tomatenscheiben
Zwiebelringe
Ananasscheiben
veganer Käse

Zubereitung

Kartoffel würfeln, in Salzwasser gar kochen.

In einer großen Pfanne 1 EL Öl erhitzen. Zwiebeln und Knoblauch anbraten. Pilze hinzufügen, 5 Minuten braten. Dann die Bohnen, Sonnenblumenkerne (oder Walnüsse), das Paprikapulver, Salz und Pfeffer dazugeben. Die Masse weitere 5 Minuten braten.

Die Masse kurz abkühlen lassen, dann in eine große Schüssel füllen. Maisstärke, Kartoffel in Würfel und Petersilie unterheben. Dann mit einem Kartoffelstampfer die Masse grob zerstampfen, so dass sie teils noch stückig ist. 

Aus der Masse 6 Patties formen. In einer Pfanne in Öl von beiden Seiten braun anbraten. Dabei vorsichtig wenden.(Die Patties können auch im Kühlschrank bis zum nächsten Tag aufbewahrt und dann erst gebraten werden.)

Burger nach Belieben belegen:
z.B. mit Salat, Tomate, Zwiebeln, einer Scheibe Ananas (vorher in der Pfanne anbraten), Käse …

Zubereitungszeit gesamt: ca. 1:30 h 

Rezept

4 Portionen:
– 8 x Tortillas (ca. 20 cm Durchmesser)
– 2 Maiskolben, vorgegart (alternativ 1 Dose Mais)
– 3 große Zucchini
– 1 Dose schwarze Bohnen (400 g )
– 1 Zwiebel
– 2 Knoblauchzehen
– 800 g Tomatenpasata oder gewürfelte Tomaten (Dose)
– 150 g veganer Gratin-Käse
– 1/2 TL Salz
– 1 Prise Zucker
– 1 TL Paprika Pulver (mild)
– 2 EL Kräuter, gehackt (Oregano, Petersilie, oder Kräutermischung)

Zubereitung

Ofen auf 180° C vorheizen

Zucchini waschen, und in dicke Wedges schneiden. Maiskolben und Zucchini mit Öl einpinseln, im Ofen ca. 30 Minuten backen bis sie gar sind und der Mais golden braun.

In der Zwischenzeit die Sauce zubereiten: in einem Topf etwas Öl erhitzen. Zwiebel und Knoblauch glasig anbraten. Tomaten, Salz, Zucker, Kräuter und Paprikapulver dazugeben. 20 Minuten köcheln lassen.

Tortillas füllen:

Mit einem scharfen Messer die Körner der Maiskolben entfernen. Die Tortillas mit den Bohnen, Zucchini, der Hälfte der Maiskörner und der Hälfte des Käses sowie je 2 EL der Sauce füllen, dann die Tortillas aufrollen.

(Optional die Tortillas vorher in einer Grillpfanne anrösten, dann aber sofort füllen, da sie sonst zu trocken werden).

Die 8 Tortillas in der Auflaufform anreihen. Die restliche Sauce mittig darüber verteilen, sowie den restlichen Mais und Käse.
